Vineyards located in small plots in the Salnés valley on granitic soils, with traditional vine training. The grapes are harvested by hand in boxes. The bunches are destemmed and partially macerated prior to gentle pressing. Static racking and start of fermentation at controlled temperature in stainless steel tanks. Finally, when the wine shows a balance between fresh acidity and a subtle touch of sweetness, fermentation is stopped by racking and applying cold, leaving a portion of sugar (12 grams) and a high acidity, in the style of German Kabinett wines. Contains sulphites.
