Clayey and slightly stony soils. Double cordon trellis plot located in front of the winery at an altitude of 850 m. in the municipality of Arafo. Manual selection and harvesting in 15 kg. boxes, destemming and light pressing in a pneumatic press. The must ferments at a temperature of 22 degrees with the grape's own yeast in a steel tank. Ageing in stainless steel tanks for 6 months. Bottling is done with the minimum addition of sulphur dioxide, and a light clarification and filtering. Only 1200 bottles. Low sulphur content. Contains sulphites.
