El Camaleón

A single varietal Garnacha grape. The grapes come from two small plots in the areas of Navarrete and Villanueva (pagos de en medio) on schist and black phyllite soils. These are the only Garnacha vineyards in the area, facing north in search of freshness. Harvested by hand in boxes with the help of mules. The Villanueva plot was harvested the third week of August and the Navarrete plot a week later as it was shadier. Spontaneous fermentation of the grapes from the two plots in stainless steel tanks. Malolactic fermentation. Aged for 10 months in old 1000-litre concrete vats on its fine lees. Contains sulphites.
