Alcoholic and malolactic fermentation in stainless steel tanks. Granitic soils (sábrego) from the Miñoteira, Portela, Pereiro, As Barcas and Barbaña estates. Made from the must press (0.2 to 1.5 bar) of the grapes destined for our best wines together with a small percentage of palomino located in small plots on the property. Harvesting is carried out by hand including a selection of clusters on the vine itself. The grapes are transported to the winery (5 minutes) in bulk in tractors with loads of less than 1500 kg to maintain the integrity of the grapes. At the entrance to the winery, the grapes are gently crushed and pressed in a semi-closed pneumatic press. Contains sulphites.
