Alcoholic and malolactic fermentation in stainless steel tanks. Granitic soils (sábrego) from the Miñoteira and Pousos estates. Made with Caiño longo and Brancellao varieties planted mostly in our Pousos estate, and another part from the Miñoteira estate. The grapes are harvested by hand, including a selection of bunches on the vine itself. Transport of the grapes to the winery (5 minutes) in bulk in tractors with loads of less than 1500 kg to maintain the integrity of the grapes. Vatting of the crushed grapes with two aerated pump-overs per day at the beginning of fermentation, followed by closed fermentation. Devatting at a density of 1020 to finish fermentation without bagasse. Pressing of the bagasse by means of a manual vertical press made of stainless steel. Contains sulphites.
