10 months in 500 litre French oak barrels. Slate soils, hand harvested in 15 kg crates, grapes without destemming or crushing. Fermentation started with indigenous yeasts, mash stirred using the traditional method twice a day for 20 days. Malolactic fermentation and ageing for 10 months in a 500 litre barrel. A fresh, complex wine with a great Atlantic and mineral character from a French variety such as trousseau adapted in Asturias, and also in Galicia under the name of merenzao. Contains sulphites.
