Roger Goulart Brut Millesime is an organic cava made mainly with Xarel-lo from sustainable vineyards in the Anoia and Foix river basin. It is harvested early in the morning to ensure freshness and fermented at low temperature before secondary fermentation and aging in subway cellars. Pale yellow in color, it has intense notes of fresh fruit and a balanced sweet profile with lively acidity, ideal for serving between 6ºC and 8ºC.

Vineyard Characteristics

Roger Goulart The grapes used for its cavas are sourced from the historic Cava region, south of Barcelona, specifically in the Anoia and Foix river basins. This area is bounded by the Sierra Litoral mountain range, which runs along the Mediterranean coast, the Sierra Prelitoral de Mediona-Pontons, and the Montserrat massif. These geographical features create a unique microclimate, ideal for producing grapes of excellent quality for cava production. The vineyards are situated on various soil types at medium and high altitudes, ranging from 300 to 700 meters. Yields range from 6,000 to 10,000 kg/ha, depending on the variety and the characteristics of the terrain.

Since our inception, we have managed the vineyard using sustainable and environmentally friendly practices. In recent years, we have been working toward converting the vineyard to organic farming.

Winemaking Characteristics

A traditional blend of native Penedès varieties, with a prominent role played by Xarel·lo. The grapes are harvested separately, with each variety picked at its optimal ripeness and always during the early morning hours, taking advantage of the nighttime coolness that preserves freshness and reduces the risk of oxidation. Before pressing, the grapes are carefully chilled to prevent the loss of aromas. With very low pressing yields, a clean and delicate must is obtained, which undergoes preliminary settling and ferments at a low temperature for more than ten days, always using selected yeasts to preserve the varietal character. The second fermentation begins with the tirage and is followed by aging in underground cellars, located 30 meters deep and maintained at a constant temperature of 14 °C throughout the year.

Tasting Notes

Pale yellow in color with greenish highlights, clean and bright. The bubbles are fine and consistent, with an elegant crown forming on the surface.

On the nose, it stands out for its freshness and liveliness, with intense notes of fresh white fruit—apple, pear—citrus, and a delicate hint of pineapple, against a subtle backdrop of yeast and freshly baked bread. On the palate, it is slightly sweet but perfectly balanced thanks to a lively acidity that lends harmony, roundness, and a silky texture. The finish is persistent, with a very clean fruity aftertaste and soft toasted nuances.

It is recommended to serve between 6 °C and 8 °C, using an ice bucket to maintain the ideal temperature while serving.
