Made with white Albarín 80%, Albillo and Palomino 20%, in slate soils from vineyards ranging from 20 (Albarín) to 80 years old (Albillo and Palomino). Harvested by hand, the grapes arrive at the winery in 15 kg crates. The grapes are left for 24 hours in cold maceration. After this, the grapes are lightly pressed and cold-soaked for a further 24 hours. Fermentation with its own yeasts for 10 to 12 days at 14-16º. After that, 500 litres are separated and aged in a barrel for 2 months. The rest rests in a stainless steel tank. After 2 months, the wine is blended again and then gently filtered before bottling. Contains sulphites.
