Alcoholic and malolactic fermentation in stainless steel tanks. Different calcareous clay soils with more or less organic matter. Harvested by hand during the night in our own vineyards in Fitero. After gentle pressing and natural clarification by cold pressing, the must is obtained. Fermentation, only of the free-run must, is carried out in stainless steel tanks at a controlled temperature (between 14ºC and 15ºC), which facilitates the extraction and preservation of the primary aromas (fruity and floral) typical of the variety. Decanted, stabilised and bottled when still young. Best consumed within a year of its production. Contains sulphites.
