Slate soils, vineyards over 90 years old. Harvested by hand in 15 kg crates, grapes are not destemmed or crushed. Fermentation is started with indigenous yeasts, stirred with the traditional method twice a day for 20 days. Malolactic fermentation and ageing for 21 months in a 500 litre barrel. 6 months in bottle for refinement. A fresh, complex wine with a great Atlantic and mineral character from a French variety such as trousseau adapted in Asturias, and also in Galicia under the name of merenzao. Contains sulphites.
