Alcoholic fermentation with a duration of about 2 weeks at low temperature. Subsequent natural and complete malolactic fermentation in a very special vineyard with limestone soils from the Kimmeridgian Jurassic period. Only the must from the first pressing is used in the vinification of the Grande Sendrée cuvée. Mechanical presses with low pressure. Gravity is used to avoid racking, which prevents oxidation. Minimal use of sulphur dioxide. Natural racking. Alcoholic fermentation lasting about 2 weeks at low temperature. Subsequent natural and complete malolactic fermentation. No filtering. The blend includes 35% of wines aged in foudres. After bottling, matured for more than 9 years before release. 4.5 g/l dosage for long-aged wines. Contains sulphites.
