A single varietal Romé grape, a variety native to Malaga that was on the verge of disappearing. Made with grapes from 5 small plots at an altitude of 700 metres. Harvested by hand and taken in small boxes by mules through the narrow and steep roads of the Axarquía. Maceration, alcoholic fermentation and malolactic fermentation is carried out for 3 months in a large 2000 litre vat with light toasting. After that, it remains in the same vat for another 10 months for ageing and refinement. The wine has a low robe, with aromas of ripe red fruits. On the palate it is longer than it is broad, with depth rather than volume. We have managed to get the best out of this variety with little colour, and therefore more difficult to make wines with great structure. A wine that joins the few single varietals of this variety of great personality. Contains sulphites.
