Soleras and criaderas started years ago with Montilla musts that were fermented in the winery itself. Short fermentation that is quenched at 15º with wine alcohol, leaving the wine with 400 grams of sugar. These soleras are already more than 6 years old on average, but the difference in this new Origen range is that the sobretablas from now on will be fed with their own grapes, from their own vineyards in Sanlúcar de Barrameda, specifically from Pago Callejuela. It should be remembered that in the Jerez area there was also a lot of Pedro Ximénez planted years ago, so the Blanco brothers are simply recovering a tradition. Contains sulphites.
