Winemaking characteristics

The Verdejo variety used to make this wine comes from singular vineyards. The grapes are harvested at night to preserve the aromas and a first selection of clusters is made in the field. Once in the winery, the grapes are pressed and the must is transferred to stainless steel tanks to ferment at a controlled temperature, with the aim of extracting and preserving the primary, fruity and white flower aromas typical of the Verdejo grape.

Harvest data

The 2024 harvest began on August 29 and lasted until October 4. It was a smaller harvest than in previous years.

The harvest was carried out at night and was staggered to preserve the grapes in perfect organoleptic conditions and avoid oxidation.

The weather conditions, with a wide temperature differential between day and night and moderate temperatures during the day, were the precursor to slower ripening and allowed the grapes to be harvested with the ideal parameters, although they also increased the pace of the harvest in the last two weeks.

The quantity harvested has been lower due to weather conditions and good practices in the vineyard.

The wines are expected to be fresh on the nose with good volume on the palate.

Tasting notes

Pale yellow in color, its high aromatic intensity is striking, where delicate nuances of fennel, white flowers, subtle hints of aniseed and ripe stone fruit intertwine.

The palate is fresh and enveloping, with a balanced passage that leads to a slightly bitter finish, a distinctive characteristic of the Verdejo variety. The aftertaste is long and balsamic, leaving an elegant and persistent impression.

A versatile wine that can be enjoyed on its own or as an ideal accompaniment to seafood, fish, cold meats and even dishes with exotically inspired sauces.

it can be served with seafood, fish, cold meats and even exotic sauces.
