The manual harvest and fermentation in stainless steel tanks produce a wine with notes of fruit, fresh herbs and a floral and saline background. It presents a good structure in the mouth, with freshness, balance and a saline and slightly bitter finish.
Characteristics of the vineyard
Blend of the different vineyards of the winery, containing the characteristics of each one of them. In fact, in this wine we can find peculiarities of the three typical soils of the Rías Baixas appellation, granite in Taboexa (acidity), alluvium and boulder in Arantei and Porto (fruitiness) and schist in Vilachán (minerality).
Winemaking characteristics
Harvest by hand in 20 kg crates. The grapes are transported and stored in cold storage. Pellicular maceration of 40% of the grapes at 10 ºC for 4 hours. Soft pressing with selection of the best must and yolk. Fermentation in stainless steel tanks at 16/17ºC. The wine is devatted with its fine lees with which it remains for about three months.
Harvest data
One of the earliest harvests in the history of the Denomination. It begins on August 30. Very warm and humid spring, responsible for the great vegetative advance of the vine cycle. Normal summer in terms of temperatures and rainfall, which allowed the grapes to ripen slowly and perfectly. A good flowering combined with the lack of fungal and climatic incidents allowed a good harvest in terms of quantity and quality. Musts of moderate alcohol content and correct acidity, very aromatic.
