Cuvvée "Vilelli en Fut de Chêne". Grape selection in the vineyard already by the time it arrives at the winery. After pressing, the grapes are cold racked for 24 hours at 8°C (46°F). A large racking to remove the gross lees, the wine is put to ferment in stainless steel tanks. Selected yeasts are used. Alcoholic fermentation under temperature control at 16°/18°C.
