On schist and black phyllite soils, the Syrah vineyard is La viña del El Romeral in Colmenar (Pagos tardíos). Vineyard at an altitude of more than 800 m above sea level, set in a meadow of holm oaks and north face. And the Romé vineyard is La viña de Santo Pitar (Late Pagos), on the border with the Montes de Málaga, close to 1.000 m of altitude, also on the north side. The grapes are harvested by hand in boxes. Syrah in the second week of September and Romé in the first week of October. Spontaneous fermentation of each variety separately in stainless steel tanks. When fermentation is complete, they are blended together for ageing. Aged for 6 months in 600-litre French oak casks. An agile, fresh wine, with fruit and soft tannins. Contains sulphites.
