Ademán Adalia Verdejo
A more intense and full-bodied Verdejo than is usual in wines from nearby appellations, such as Rueda. The two months of aging provide structure and place Adalia on a more gastronomic level.
It shows on its label the gesture that was used in the famous Star Trek series, in which it was called "the Vulcan salute". It is a wink saying that it is "the Verdejo salute", as it is a wine made with 100% Verdejo grapes from Toro from a 30 year old vineyard.
Tasting Notes
Clean and bright, yellow color with greenish hues, medium aromatic intensity and complex with herbal notes, aniseed and toasted. The palate is ample and silky, balanced, the acidity is pleasant. The palate is ample and silky with a long and structured aftertaste leaving a slight bitterness typical of the Verdejo variety.
Gastronomy
Perfect combination with salads, fish, rice, pasta dishes and white meats.
Conservation and consumption
Positive evolution over the next 2 years due to its time in barrel. Best kept in optimum conditions (14-16ºC) at 70-80% relative humidity. Best consumed between 4-10ºC.
Technical information
Night harvest, cold maceration and maceration on its own lees for two months before maturing for two months in new lightly toasted French oak barrels. Vineyards 35 years old in goblet-trained vines from the Adalia winegrowing area, very sandy and somewhat pebbly. Low yields about 4,000 Kg//Ha.a
