Ademán Valdearanda
Goblet-trained vineyards between 50 and 60 years old. Harvest by hand in boxes and selection in the winery. Prefermentation and cold maceration for 48 hours, followed by a slow and careful fermentation below 22°C for 18 days. Aged for approximately 12 months in French oak barrels.
This crianza wine is represented by mature hands of 48 years old and a gesture of reflection typical of adult people. It represents a mature aged wine and a very consolidated type of vineyard.
Tasting Notes
Cherry red color with some violet tones, very broad and complex combining ripe fruit and some red fruit with toasted aromas from the barrels and spicy notes typical of French oak. The palate is ample, silky with a touch of acidity. It has an excellent persistence where the aromatic and gustatory balance is combined with a long and sweet finish.
Gastronomy
Its long and sweet mouth makes it a perfect match with grilled meats, roast lamb and even well-cured cheeses
Conservation and consumption
Positive evolution over the next 6 years. Keep in optimal conditions (14-16ºC) at 70-80% relative humidity. Best consumed between 14-16ºC.
