The clay-siliceous terroir known as "Silex" gives the wine characteristic flinty notes. Four 40 to 45 year old plots thrive in this unique terroir. After a long pneumatic pressing at low pressure, the must flows by gravity from the press to the tank to avoid handling the grapes and must. This is followed by 12 hours of static cold settling and alcoholic fermentation in stainless steel tanks at controlled temperatures.
It matures in stainless steel tanks for 6 to 7 months on its fine lees to enhance its aromatic richness. It is then clarified, stabilized and bottled. Fresh, floral and mineral aromas are perceived on the nose. The palate is mineral, with light flinty notes, concentrated and balanced. Served between 10 and 12 °C, this Sancerre Blanc Silex, with its distinctive profile, will pair perfectly with lobster, trout with almonds, or a seafood dish. 8/10 years of evolution.
