Description
Average age of 5 years in old American oak casks. Soils of different albarizas. Aged for an average of 5 years in old American oak casks. From Palomino fino grapes from our three vineyards, 30% Macharnudo 50% Añina and 20% Callejuela approximately. The grapes are harvested as late as possible in order to obtain the greatest possible structure so that the wine never loses its personality and strength during the biological ageing period. Our aim is for our manzanillas to reflect the soil and the work in the vineyard rather than an excessive biological load. Fermented in stainless steel tanks at a controlled temperature, in January is when we alcoholise the wines of the year and transfer them to butts, leaving very little vacuum to allow the new wine to mature, when it goes to the solera we gradually leave it emptier and emptier. This solera has three classes, in the third class we leave three arrobas empty, in the second class also three arrobas and in the first and solera we leave 4 arrobas empty. Four annual sacas are made, more or less of 1250 or 1500 bottles per saca. The result is a golden straw-coloured manzanilla, intensely floral, very fresh, with a very pronounced salinity and an intense and very long aftertaste. Contains sulphites.
