Description
Average age of 12 years in old American oak casks. Soils of different types of albariza. Aged in old American oak casks. From Palomino fino grapes from our three vineyards, 30% Macharnudo 50% Añina and 20% Callejuela approximately. The grapes are harvested as late as possible in order to obtain the best structure so that the wine never loses its personality and strength during the biological ageing period. This amontillado comes out of the solera of our Blanquito manzanilla with an average age of twelve years of biological ageing with a high alcoholic content due to concentration and we add a little alcohol to stop the development of the veil of flor, passing to an oxidative ageing in three criaderas. Topaz colour, very sharp nose, extremely dry with character and finesse, very saline notes stand out together with a touch of caramel, orange preserve and hazelnut bitterness with an intense and almost endless aftertaste. Contains sulphites.
