A new wine from the Blanco brothers. From their young Pedro Ximénez vines planted in Pago Callejuela. Made with grapes at a high ripening point in the vineyard to reach a high sugar level and then sun-dried for 15 days. After that, it is taken to the winery, destemmed, and fermented with its skins and its own yeasts until it reaches an alcohol content of 12.5º, but maintaining more than 165 grams of sugar. It is then kept for a few months in a stainless steel tank without temperature control. Filtered and bottled in April 2021. The result is a spectacular sweet PX wine made with grapes from Sanlúcar de Barrameda, unlike many PX from the Marco de Jerez made with wines from Montilla-Moriles. Contains sulphites.
