Characteristics of the vineyard

This wine is made with a selection of grapes from our plots cultivated in terraces since 1998, located in different plots of the municipality of Entoma - Val do Galir, such as Valdemioto and Soutiño Novo. Being in terraces we ensure an optimal retention of rainwater to promote rooting and organic matter uptake. South facing in the upper part of the terraces at an altitude of 500m. Clay loam soils and, predominantly, deep slate soils. Despite the fact that the area usually has hot summers and that the Mencía and other red varieties are later in ripening, cultivation on terraces allows us to protect the clusters, leaving a good leaf density and favoring aeration. What makes the difference is the maceration with other minority varieties such as Brancellao, Sousón or Garnacha Tintorera or Alicante Bouschet. Sustainable viticulture is carried out.

Winemaking characteristics

Manual harvesting in 15 kg boxes. Maceration of the grapes in boxes in refrigerated refrigerator and in tank 48 hours prior to alcoholic fermentation. Destemming and no crushing of the grapes to favor the primary aromas. Fermentation in small stainless steel tanks (60 hl), 1/3 of whole grapes with stems and the rest 2/3 destemmed without crushing.

Harvest data

The 2022 harvest in Val do Galir for the mencía grape started the second week of September, marked by a dry and warm spring and summer, with slightly high temperatures during the day and cool at night, earlier budding than in the 2021. Moderate alcoholic ripening, with good Ph and excellent fruit health, we believe this is the year of purity. Low yields as a result of the drought.

Tasting Notes

Intense color. Concentration of red fruits where black fruits predominate and evolves in spicy, fresh and balsamic notes. In the mouth it is balanced, ample, with dense tannins characterized by an enormous complexity. Fresh, intense and balsamic, its long persistence is driven by its prominent acidity. Ideal pairing with rice dishes, game meats, chocolate... Serving temperature 16ºC.
