Las Bacantes

Vineyards in very poor, acidic and sandy soils of granitic origin. Currently the grapes come from a single vineyard in the area called El Camino Real in Cadalso de los Vidrios. Old vines over 90 years old. The grapes were harvested on 25th August 2021. Grape selection in the vineyard and in the cellar. Vatting in open vats, crushed and pressed. Destemming in stainless steel tanks by gravity for 24 hours. Autochthonous yeasts during fermentation in Burgundian barrels and aged for 10 months in the same barrels with its own lees. Unfiltered and unstabilised. Bottled on 19 January 2023 (flower day) Another great job by the winemaker and winemaker, Carlos Sánchez. Minimum availability. Contains sulphites.
