Roger Goulart Organic is a certified organic cava, made with grapes from sustainable vineyards located in the basin of the Anoia and Foix rivers, at altitudes of 300-700 meters. Fermentation is carried out at low temperature and the second fermentation and aging at 30 meters deep. Pale yellow in color with fine bubbles, it has fruity and citrus notes, fresh acidity, and an elegant and persistent finish.

Characteristics of the vineyard

Roger Goulart the winery locates the production of grapes for its cavas in the historic Cava area, south of Barcelona, in the so-called basin of the Anoia and Foix rivers. This area is delimited by the Sierra Litoral mountain range that touches the Mediterranean, the Sierra Prelitoral de Mediona-Pontons and the Montserrat massif, orographic elements that give the enclave a special microclimate suitable for the production of the best grapes for the production of Cava. The vineyards are located on different types of land at medium-high altitudes, between 300 and 700 meters above sea level, with yields of between 6,000 and 10,000 Kg/Ha, depending on the varieties and characteristics of the land. We have always worked the vineyard with sustainable practices that respect the environment, and in recent years we have been promoting its conversion to organic.

Production characteristics

Cava from organic viticulture, certified by the CCPAE (ES-ECO-019-CT) and Certified Winemaker No. CT005574 E.

Elaboration of varieties separately. The grapes are refrigerated prior to pressing (to avoid loss of aromas). Must pressing yields of 50%. Static racking at low temperature. Must fermentation at 16-18ºC with selected yeast. Base wines with an important acid component and a fairly low pH for long aging. After tirage, the second fermentation and aging is carried out in cellars located at a depth of 30 meters, at a constant temperature of 14ºC throughout the year.

Tasting notes

Very pale yellow color with light greenish reflections, clean and bright, good release of very fine bubbles and slight crown formation on the surface. On the nose, intense fruity notes reminiscent of fresh white fruit on a citrus background with a slight floral sensation and light notes of aging on fine lees, very fresh overall and medium-long intensity. The palate shows a lively and fresh acidity with a slight hint of sweetness that make it very pleasant for its balance and elegance, with fruity mouth aromas, slightly fleshy, long and persistent. Persistent finish with a very elegant bouquet with delicate notes of aging and creaminess. It is recommended to be consumed at a temperature between 6 ºC and 8 ºC and the use of ice buckets to maintain the temperature during service.
