Cune Organic
Cune Ecological is a red wine made with Tempranillo, Grenache and Graciano grapes from organic vineyards in Haro and San Vicente. Hand harvesting and natural fermentation preserve the fruity aromas and liveliness of the wine. It has a purplish color, black fruit aromas and a smooth, round flavor, ideal for pairing with Mediterranean food and cheeses.
Characteristics of the vineyard
The grapes used for this wine come from the vineyards of our usual suppliers in the Haro area and also from San Vicente, who in recent years have made a firm commitment to organic cultivation.
The soils are mainly clay-limestone. The fertilizers used are organic and of vegetable origin. The use of herbicides, synthetic pesticides and any agricultural practice that may alter the natural balance of the soil or the environment is avoided.
Winemaking characteristics
The Tempranillo, Grenache and Graciano varieties are harvested by hand and picked separately at optimum ripeness.
Each variety is made separately, with minimal crushing and vatting in small concrete tanks. On arrival, the grapes are kept at 12 ºC for 12 hours to prevent oxidation of the must and preserve the liveliness of the color.
Alcoholic fermentation is carried out spontaneously with indigenous yeasts, and the use of additives such as sulfur dioxide is limited. The fermentation temperature is controlled and kept at around 24 ºC to preserve the varietal aromas and the natural expression of each grape.
After malolactic fermentation, the wine is aged for six months in 300-liter barrels before stabilization and bottling.

Harvest data
The 2022 harvest was marked by drought and high temperatures, which led to uneven ripening depending on the plots, yield and other agronomic factors.
The harvest was earlier than in previous vintages, as a result of unusually high temperatures since May and low rainfall during the summer months.
In this context, ripening samples and grape tasting were essential to decide the exact moment to harvest, in order to preserve the primary aromas, acidity and freshness of the wine.
The harvest of this wine took place between October 3 and 7, 2022.
