The vineyard is located in El Palo (Toro) with more than 100 years old. Altitude: 820 m. Organic fertilization. Biodynamic viticulture. Yield is 1,200 kilograms per hectare.
Grape selection in the winery, complete destemming, cold maceration for 48 hours. Two daily pumping over by punching down. Fermentation and maceration with the skins for 18 days. Malolactic fermentation and aging in new Spanish oak barrels with ONYX toasting for 18 months. A real jewel, to drink now or to cellar, as only great wines can be.
