J.M. REVERDY LA VILLAUDIÈRE
It comes from a blend of 47 southeast facing plots, from vines with an average age of 30 to 40 years. The terroir is composed of 65% Caillottes (limestone), 30% Terres Blanches (Kimmeridgia marl) and 5% flint. After pressing at low pressure, the must flows by gravity. This is followed by 12 hours of static cold settling, followed by alcoholic fermentation in stainless steel tanks.
The wine matures in stainless steel tanks for 5 to 7 months on fine lees to express all its aromatic richness. It is clarified, stabilized and bottled. It reveals a nose that respects the expression of the terroir, combining floral aromas, peach and exotic fruits. The palate is harmonious and direct, combining freshness, body and minerality. Served between 10 and 12 °C, it pairs perfectly with appetizers, seafood, oysters, fish, pâté vol-au-vents and goat cheeses. It will evolve positively for 5 to 6 years.
