J.M. REVERDY LE PARADIS
The "Le Paradis" plot is about sixty years old. It is located in Sancerre, on a hillside, in the Caillottes terroir, and enjoys a southeast exposure. The harvest is transported to the press by vibration and the must flows by gravity, malolactic fermentation is not carried out to preserve acidity and freshness.
Fermentation and subsequent aging is carried out for 12 months in barrels that have held several wines. The purpose of this barrel aging is to allow exchange with the exterior to better express the soil and the uniqueness of this plot, with its corresponding texture and finesse.
The nose offers notes of grapefruit, fresh herbs and white pepper. The palate is silky and light, with aromas of acacia flowers, honey and citrus. Minerality and finesse are the hallmarks of this Sancerre. Serve between 10 and 12 °C. Le Paradis will enhance a scallop risotto, monkfish tail blanquette and blue cheeses.
