Located in the Paarl region, in the shadow of the Simonsberg mountain, the dry-farmed vineyards are between 8 and 12 years old and are planted on well-drained decomposed granite soils. At an altitude of between 300 and 500 metres above sea level, the grapes develop slowly, and the early afternoon shade helps to slow down the ripening process. All these factors result in grapes with an intense dark red colour, full ripeness and well-ripened, well-structured tannins. The grapes were harvested between mid-February and early March 2020, between 24.4 and 25.6°. At the winery they were crushed and transferred to open stainless steel fermenters. It was inoculated and, once fermentation had begun, regular pumping-overs were carried out to extract colour, tannins and flavour. Once fermentation was complete, the wine was left on the skins for a further 4 to 7 days. The wines were racked into barrels where malolactic fermentation was completed. The wine matured for 14 months in 300-litre French oak barrels, 55% new. The barrels were carefully selected to create this unique wine. After blending, the wine spent a further 4 months in third-fill barrels. The wine underwent coarse filtration before bottling. Contains sulphites.
