9 months in French oak barrels of different uses. Calcareous clay soils. The grapes are harvested in 10 kg boxes very early in the morning and transported to the winery in refrigerated trucks. Once in the winery a selection table is used for 100% of the grapes, 80% of which go into barrels and 20% into stainless steel vats to be pressed. The juice thus obtained is then cold decanted for a period of 12 hours and then the coarse lees are separated from the must. Fermentation begins in stainless steel vats and then continues in barrels. 35% of the must is fermented with native yeasts and 65% with selected yeast. After fermentation, the wines are kept in barrels with weekly batonnages. Contains sulphites.
