100% Albariño in xisto, xabre, (clayey) soils. Maceration prior to gentle pressing. Temperature controlled fermentation in steel tanks. Wild yeasts. Ageing in 225 and 500 litre barrels of used wood for 9 - 10 months. Partial malolactic fermentation, without lees work. Fresh and direct. Bottled August 2023. Contains sulphites.
