Viberti Boun Padre Barolo
Pruning in the vineyard and selection during the harvest. Harvest in 20 kg crates. After destemming and pressing, alcoholic fermentation in contact with the skins takes place for 13-18 days in a rotofermenter with a capacity of 7500 litres. Malolactic fermentation in steel tanks at an average temperature of 20°C. Ageing for 36-40 months in wooden barrels and vertical "tini" vats of 40-50 hl capacity. Buon Padre is a balanced blend made with grapes from 5 different vineyards located in the village of Barolo (Bricco delle Viole, San Pietro, San Ponzio, La Volta & Fossati-Alessandria. Bottling, in late spring, is carried out without filtration. The wine reaches maturity after 6 months in the bottle before being put on sale. Contains sulphites.
