Umbretum Brut Nature
Made according to the traditional method, using only Garrido fino grapes, a variety native to Seville's Aljarafe region. Harvested at night in July. Temperature controlled fermentation in stainless steel tanks. The yeast is the autochthonous yeast selected from a previous foot of vat. A short ageing in butts of 6 months, after which a second fermentation is carried out in the bottle. It is aged for 24 months before disgorging without the addition of shipping liquor, making it a Brut Nature that retains all the personality of the grape and the soil. Aromatic notes from the lees, a lot of bakery, a fat mouthfeel and medium acidity. Contains sulphites.
