Alcoholic and malolactic fermentation in concrete tanks. Calcareous clay soils, with 40-60 year old unirrigated vines. As part of the Valencian winery's Bobal Project, the winery produces a 100% rosé made from this Mediterranean grape variety. A simple, fresh wine. It is neither a Provençal rosé, so fashionable nowadays, nor a deep-coloured rosé, something in between. It contains sulphites.
